Buckeye Ice Cream

Growing up with a dad from Ohio, our holiday tradition was making Buckeyes. Hand-molding little balls of peanut butter and then dipping them in melted chocolate (then taking care to cover up the little holes from the toothpicks). These little treats rarely lasted long in the freezer, as everyone in the family snatched one throughout the day or they were gifted to neighbors. As an homage to my "faj" (as we call him) I made Buckeye Ice Cream courtesy of my favorite ice cream maker, Jeni. Kevin and I made a pilgrimage to Jeni's first ice cream shop in Columbus, Ohio over the summer and taste-tested the delectable Buckeye Ice Cream, and I've gotta say, my homemade version turned out pretty great! If you're looking for an awesome gift for an ice cream lover in your life, I can't recommend Jeni's Splendid Ice Creams at Home cookbook enough! Happy eating!
